Rosemary-Dijon Salmon with Roasted Sweet Potatoes and Lentil Salad

Dear Lefty Spooners,

About three weeks ago, The Instant Kitchen Meal Prep Cookbook had its publication day. In honor of the book release, I was interviewed on two of my favorite podcasts, so fun!

If you want to have a listen, check out my episode of The Dinner Plan, where interviews cookbook authors and other food world folks about their ideas for getting dinner on the table. It’s such a universally useful podcast, since we’re all faced with the question of what’s for dinner every night! We talked about how meal prep transformed my weeknight routine and lots more.

I also had a really wonderful time chatting with Meg Scott and John Becker on The Joy of Cooking Podcast. They’re the stewards of The Joy of Cooking cookbook, having brought it through its most recent update, and their podcast is equally joyful to listen to! We chatted about their book and mine, as well as our favorite Portland and Eugene restaurants, kitchen triumphs and failures, and what we’ve been cooking and eating lately.

You can also find reviews of the book as well as my advice on air frying and pressure cooking in these recent articles:

The Mommies Reviews — A super in-depth review of the book!

Tasting Table — The Case For Cooking Mac And Cheese In The Air Fryer. I give my best tips and tricks for getting creamy noodles and a crispy top.

Katie Couric’s Newsletter — She shares a recipe from the cookbook! Try out the Rosemary Dijon Salmon and Sweet Potato Lentil Salad.

Chowhound — 10 Air Fryer Myths You Need To Stop Believing. I loved answering all of these interview questions, and I hope I helped to dispel a few pervasive myths along the way! There really isn’t a day that goes by that we don’t air fry something in my house, so I’m always happy to weigh in.

Writer’s Digest — An insider’s look at what it took to write The Instant Kitchen Meal Prep Cookbook, and my advice to anyone else who’s interested in writing a cookbook.

Wishing you all a winter full of comforting meals,

Coco
